Ingredients
  

1 large tortilla (whole wheat or white)

1/2 cup pizza sauce (or marinara sauce)

1/2 cup shredded mozzarella cheese

1/4 cup diced bell peppers (mixed colors)

1/4 cup finely chopped spinach

1/4 cup sliced black olives

1/4 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

Olive oil spray or cooking spray

Optional: crushed red pepper flakes for a spicy kick

Instructions
 

Prep the Tortilla: Lay the tortilla flat on a clean surface. Lightly spray one side with olive oil to help it crisp up when baked.

    Spread the Sauce: Evenly spread the pizza sauce over the ungreased side of the tortilla, leaving about half an inch border around the edges.

      Layer the Filling: Sprinkle the mozzarella cheese over the sauce, then layer the diced bell peppers, chopped spinach, and sliced black olives evenly on top of the cheese.

        Season it Up: Sprinkle the grated Parmesan cheese, Italian seasoning, and garlic powder over the veggie layer. Add crushed red pepper flakes if you prefer some heat.

          Roll it Up: Starting from one edge, gently roll the tortilla tightly into a log. Once rolled, give it a little squeeze to hold the filling in.

            Slice the Rolls: Using a sharp knife, slice the rolled tortilla into bite-sized pieces, roughly 1 to 1.5 inches wide.

              Preheat and Bake: Preheat your oven to 375°F (190°C). Place the roll-ups on a baking sheet lined with parchment paper, cut side up. Lightly spray the tops with olive oil.

                Bake: Bake in the preheated oven for about 12-15 minutes, or until the edges are golden and crispy.

                  Serve: Remove from the oven and let cool for a couple of minutes. Serve warm with extra pizza sauce for dipping.
