Ingredients

2 cups frozen tater tots

6 large eggs

1/2 cup milk

1 cup diced bell peppers (red, green, or a mix)

1/2 cup cooked and crumbled bacon or sausage (optional)

1 cup shredded cheddar cheese

1/4 teaspoon salt

1/4 teaspoon black pepper

Fresh chives or parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare Tater Tots: In a large mixing bowl, combine the frozen tater tots and a pinch of salt and pepper. Spread them evenly on a greased baking sheet. Bake for 20-25 minutes, until golden brown and crispy.

Create the Nests: Once baked, take the tater tots out of the oven and let them cool slightly. Using a tablespoon, carefully create small “nests” by pressing down in the center of each portion to make a space for the eggs.

Prepare the Egg Mixture: In a bowl, whisk together the eggs, milk, salt, and pepper. Stir in the diced bell peppers and cooked bacon or sausage (if using).

Fill the Nests: Carefully pour the egg mixture into each tater tot nest, filling it to just above the edges. Sprinkle shredded cheddar cheese on top of each nest.

Bake Again: Return the nests to the oven and bake for an additional 15-20 minutes, or until the eggs are set and the cheese is bubbly and golden.

Garnish and Serve: Remove the nests from the oven, let them cool for a couple of minutes, then garnish with fresh chives or parsley if desired. Serve warm and enjoy your delicious mini breakfast nests!
