Ingredients

1 lb ground beef

1 packet taco seasoning (about 1 oz)

1 cup shredded cheddar cheese

1 cup refried beans

12 small flour taco bowls (or mini tortilla cups)

1 small red onion, finely chopped

1 cup diced tomatoes

1/2 cup black olives, sliced

1 small jalapeño, diced (optional for heat)

1/4 cup fresh cilantro, chopped

1 cup sour cream (for serving)

Olive oil or cooking spray (for greasing)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Beef: In a skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula. Drain any excess fat.

Season the Beef: Stir in the taco seasoning and add 1/3 cup of water. Let it simmer for 5 minutes until the mixture is thickened and aromatic. Remove from heat and set aside.

Prepare the Taco Cups: Lightly grease a muffin tin with olive oil or cooking spray to prevent sticking. Place one flour taco bowl in each of the muffin tin cups, pressing them gently to fit the shape.

Layer the Ingredients: In each taco bowl, spoon about a tablespoon of refried beans as the base. Follow with a generous scoop of the seasoned beef. Then, sprinkle a tablespoon of shredded cheddar cheese on top of the beef.

Bake the Cups: Place the muffin tin in the oven and bake for about 15 minutes, or until the cheese is melted and the taco cups are slightly crispy.

Garnish and Serve: Once done, remove from the oven and let them cool for a few minutes. Top each mini taco cup with chopped red onion, diced tomatoes, black olives, jalapeños (if using), and fresh cilantro. Serve warm and enjoy with a dollop of sour cream on the side.
