Ingredients

1 can (15 oz) sweet corn, drained and rinsed

1 cup black beans, drained and rinsed

1 cup cherry tomatoes, halved

1 cup shredded cheddar cheese

1 avocado, diced

1 small red onion, finely chopped

1 small jalapeño, diced (optional)

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper, to taste

1 bag (10 oz) tortilla chips

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Prepare the Filling: In a medium mixing bowl, combine the sweet corn, black beans, cherry tomatoes, red onion, jalapeño (if using), cumin, chili powder, salt, and pepper. Mix well to combine all the ingredients. Set aside.

Preheat the Oven: Preheat your oven to 350°F (175°C).

Assemble the Bowls: Arrange the tortilla chips in individual small bowls or on a baking sheet, forming a scoop shape by placing them upright. This will act as the base for your nacho bowls.

Top with Filling: Spoon the sweet corn mixture generously over the tortilla chips. Ensure each chip gets a good amount of the mixture on it.

Add Cheese: Sprinkle the shredded cheddar cheese evenly over the filled chips.

Bake: Place the assembled nacho bowls in the oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly.

Add Fresh Toppings: Carefully remove the nacho bowls from the oven. Top each with diced avocado and a sprinkle of fresh cilantro.

Serve with Lime: Serve immediately with lime wedges on the side for an extra burst of flavor.
