Mini Stuffed Bell Pepper Bites

12 mini bell peppers (any color)

1 cup cooked quinoa

1 cup black beans (canned, rinsed and drained)

1 cup corn (frozen or canned, drained)

1 cup shredded cheese (cheddar, pepper jack, or a mix)

1 teaspoon cumin

1 teaspoon chili powder

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

Fresh cilantro or parsley for garnish

Lime wedges, for serving

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Prepare the peppers: Cut the tops off the mini bell peppers and remove the seeds. If they do not stand upright, you may slice a small piece off the bottom to create a flat base.

      Make the filling: In a large bowl, combine the cooked quinoa, black beans, corn, and half of the shredded cheese. Add the cumin, chili powder, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are thoroughly combined.

        Stuff the peppers: Carefully spoon the filling into each mini bell pepper, pressing down gently to pack it nicely. Place the stuffed peppers upright in a baking dish.

          Top with cheese: Sprinkle the remaining cheese over the tops of the stuffed peppers.

            Bake: Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.

              Garnish and Serve: Remove the baking dish from the oven and let it cool for a couple of minutes. Garnish with chopped fresh cilantro or parsley and serve with lime wedges on the side for an extra zesty kick.
