Mini Spinach Artichoke Puff Bites

1 sheet of puff pastry (thawed)

1 cup fresh spinach, chopped

1/2 cup canned or frozen artichoke hearts, drained and chopped

1/2 cup cream cheese, softened

1/4 cup sour cream

1/4 cup grated Parmesan cheese

1/4 cup shredded mozzarella cheese

2 cloves garlic, minced

1/2 tsp onion powder

1/2 tsp black pepper

1/4 tsp salt

1 egg (for egg wash)

Olive oil (for drizzling)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Filling: In a medium bowl, combine the chopped spinach, artichoke hearts, cream cheese, sour cream, Parmesan cheese, mozzarella cheese, minced garlic, onion powder, salt, and black pepper. Mix until well combined and set aside.

      Roll Out the Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet into a 12x12 square. Cut the pastry into 3x3 squares (you should have about 16 squares).

        Assemble the Bites: Place about a teaspoon of the spinach and artichoke filling in the center of each pastry square. Fold the corners of the pastry over the filling to create a small pocket. Press the edges to seal. If necessary, use a fork to create a decorative edge.

          Egg Wash: In a small bowl, beat the egg. Brush the egg wash over the tops of the puff bites to give them a lovely golden color when baked.

            Bake: Arrange the puff bites on a baking sheet lined with parchment paper. Drizzle a little olive oil on top of each one. Bake in the preheated oven for about 15-20 minutes or until they are golden and puffy.

              Cool and Serve: Once they are golden brown, remove from the oven and let cool for a few minutes. Serve warm as delightful appetizers!
