Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 cup unsalted butter, cold and cubed

3/4 cup buttermilk

1 pound breakfast sausage (bulk or casings removed)

1/4 cup all-purpose flour (for gravy)

2 cups whole milk

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper (adjust to taste)

1/4 teaspoon red pepper flakes (optional for heat)

Fresh parsley or chives, chopped (for garnish)

Instructions

Make the Biscuit Dough:

    - Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

      - In a large bowl, mix together the flour, baking powder, baking soda, and salt.

        - Cut in the cold cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

          - Pour in the buttermilk and stir until just combined, being careful not to overmix.

            Shape the Biscuit Nests:

              - Turn the dough onto a floured surface and gently knead it a few times until it comes together.

                - Pat it into a 1-inch thick rectangle, then use a round cutter (about 2 inches in diameter) to cut out biscuit rounds.

                  - Place each biscuit round on the prepared baking sheet, and use your fingers to gently press the center of each round down to form a small nest shape, creating a little indentation.

                    Bake the Biscuit Nests:

                      - Bake in the preheated oven for 12-15 minutes or until the tops are golden brown.

                        - Remove from the oven and let cool slightly.

                          Prepare the Sausage Gravy:

                            - In a skillet over medium heat, cook the breakfast sausage until browned, breaking it up with a wooden spoon as it cooks.

                              - Once the sausage is browned, sprinkle the 1/4 cup of flour over the sausage and stir to combine, cooking for an additional 1-2 minutes.

                                - Gradually whisk in the milk, stirring continuously to avoid lumps. Continue cooking until the mixture thickens, about 5-7 minutes. Season with salt, black pepper, and optional red pepper flakes.

                                  Assemble the Nests:

                                    - Spoon the warm sausage gravy into each biscuit nest, filling generously.

                                      Garnish and Serve:

                                        - Garnish with chopped fresh parsley or chives for a pop of color and freshness. Serve hot!
