Mini Pizza Stuffed Mushrooms

12 large cremini or white mushrooms, cleaned and stems removed

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/2 cup cooked Italian sausage, crumbled (or pepperoni, if prefered)

1/4 cup bell pepper, finely diced (red, green, or yellow)

1/4 cup onion, finely chopped

2 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional, for heat)

Fresh basil leaves, for garnish

1 tablespoon olive oil

Salt and pepper, to taste

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Mushrooms: Gently clean the mushrooms with a damp cloth. Remove the stems and set aside. Place the mushroom caps, opening side up, on a greased baking sheet.

      Cook the Filling: In a skillet over medium heat, heat the olive oil. Add the chopped garlic, diced onions, and bell peppers. Sauté for about 3–4 minutes until the onions are translucent. Add the crumbled sausage (or pepperoni), cooking for an additional 2 minutes.

        Add Marinara and Seasoning: Stir in the marinara sauce, Italian seasoning, and red pepper flakes. Let it simmer for about 5 minutes. Season with salt and pepper to taste.

          Stuff the Mushrooms: Take the prepared filling off the heat and spoon it into each mushroom cap, filling them generously.

            Top with Cheese: Sprinkle shredded mozzarella cheese on top of each stuffed mushroom.

              Bake: Place the stuffed mushrooms in the preheated oven and bake for 15-20 minutes, or until the mushrooms are tender and the cheese is bubbly and golden.

                Garnish: Once done, remove from the oven and let them cool for a few minutes. Garnish with fresh basil leaves before serving.
