1 cup all-purpose flour

1 tbsp sugar

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1 cup buttermilk

1 large egg

2 tbsp melted butter

4 slices of cooked bacon (or sausage patties)

4 slices of cheese (cheddar, American, or your preference)

Maple syrup, for serving

Fresh fruit (such as strawberries or blueberries) for garnish

Instructions
 

Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

    Combine Wet Ingredients: In another bowl, whisk together the buttermilk, egg, and melted butter until smooth.

      Make Pancake Batter: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

        Preheat Griddle: Heat a non-stick griddle or skillet over medium heat. Lightly grease it with butter or oil.

          Cook Mini Pancakes: Pour about 2 tablespoons of batter onto the heated griddle for each mini pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown. Repeat until you have about 8-10 mini pancakes.
