1 cup Hatch green chilies, diced (fresh or roasted)

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

Salt and pepper, to taste

1 cup shredded cheddar cheese

8 small corn tortillas

1 cup shredded lettuce

1 cup diced tomatoes

½ cup sour cream (optional)

Fresh cilantro, chopped (for garnish)

Prepare the Filling: In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spatula (approximately 5-7 minutes). Drain any excess fat.

    Add Aromatics: Stir in the chopped onion and minced garlic. Sauté for about 3 minutes, until the onion is translucent and fragrant.

      Spice It Up: Add the diced Hatch green chilies, cumin, chili powder, salt, and pepper to the skillet. Mix well and cook for an additional 5 minutes, letting the flavors meld. If you like it spicier, feel free to add more chili powder!

        Warm the Tortillas: In a separate dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until they are pliable. This will make it easier to fold and fill them.
