2 cups cooked chicken breast, shredded

1/2 cup Greek yogurt

2 tablespoons olive oil

1 tablespoon lemon juice

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper, to taste

4 whole wheat pita pockets, cut in half

1 cup cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/2 cup crumbled feta cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken Filling: In a large bowl, combine the shredded chicken, Greek yogurt, olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Mix until the chicken is well coated and the ingredients are evenly distributed. Adjust seasoning to taste.

    Prepare the Vegetables: In a separate bowl, gently mix the diced cucumbers, halved cherry tomatoes, and sliced red onion. Season with salt and pepper to taste, and add a splash of olive oil if desired.

      Warm the Pita Pockets: If preferred, lightly toast the pita pockets in a dry skillet over medium heat for about 1-2 minutes on each side, or until warm and slightly crispy.
