2 medium-sized eggplants

1 cup fresh mozzarella cheese, shredded

1/4 cup grated Parmesan cheese

1 teaspoon dried oregano

Salt and black pepper, to taste

2 tablespoons olive oil

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    Prepare the Eggplants: Slice the eggplants into 1/2-inch thick rounds. Sprinkle both sides with salt and let them sit for about 15 minutes to extract moisture. This helps remove bitterness and prevents sogginess.

      Rinse and Dry: After 15 minutes, rinse the eggplant slices under cold running water to remove excess salt. Pat them dry with a paper towel.

        Season the Eggplants: In a bowl, combine olive oil, garlic powder, oregano, salt, and black pepper. Brush this mixture onto both sides of each eggplant slice.
