1 pound chicken tenders

1 cup buttermilk

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

1 cup all-purpose flour

1 cup cornmeal

1 teaspoon baking powder

½ teaspoon cayenne pepper (optional for heat)

Vegetable oil (for frying)

12 mini waffles (store-bought or homemade)

Maple syrup (for drizzling)

Fresh chives (for garnish)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine buttermilk, paprika, garlic powder, onion powder, salt, pepper, and cayenne pepper. Add the chicken tenders, making sure they are well-coated. Cover and refrigerate for at least 1 hour or overnight for maximum flavor.

    Prepare the Coating: In a separate bowl, mix together flour, cornmeal, baking powder, and a pinch of salt. This will be your breading mixture.

      Heat the Oil: In a deep skillet or frying pan, heat about ½ inch of vegetable oil over medium heat until it reaches 350°F (175°C).

        Dredge the Chicken: Remove the marinated chicken from the buttermilk mixture, letting the excess drip off. Dredge each piece in the flour-cornmeal mixture, pressing lightly to adhere. Shake off any excess coating.
