Mini Chicken Taco Shell Melts

1 lb ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon taco seasoning

1 cup black beans, drained and rinsed

1 cup corn (fresh or frozen)

1 cup shredded cheese (cheddar or Mexican blend)

12 mini taco shells (or mini tortillas)

1 medium avocado, diced

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

Optional toppings: sour cream, salsa, jalapeños

Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté for about 3-4 minutes until the onion is translucent.

    Season the Chicken: Add the ground chicken to the skillet, breaking it apart with a spatula as it cooks. Add the taco seasoning, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is fully cooked and no longer pink.

      Mix in the Beans and Corn: Stir in the black beans and corn, cooking for an additional 3-4 minutes until everything is heated through. Remove the skillet from heat and let it cool for a few minutes.

        Prepare the Taco Shells: Preheat your oven to 375°F (190°C). Place the mini taco shells on a baking sheet.
