Mini Chicken & Spinach Skillet Cups

1 lb ground chicken

2 cups fresh spinach, chopped

1 cup cream cheese, softened

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Olive oil for cooking

Cooking spray (for the skillet cups)

Fresh parsley for garnish (optional)

Instructions
 

Preheat your Skillet: Heat a large skillet over medium heat and lightly spray it with cooking spray to prepare for cooking the chicken.

    Cook the Chicken: Add the ground chicken to the skillet. Season with garlic powder, onion powder, salt, and pepper. Sauté for about 5-7 minutes or until the chicken is fully cooked through and no longer pink.

      Add Spinach: Once the chicken is cooked, add the chopped spinach to the skillet. Cook for another 2-3 minutes, stirring until the spinach wilts down.

        Combine the Cheeses: In a large mixing bowl, combine the cooked chicken and spinach mixture with the softened cream cheese, shredded mozzarella, and grated Parmesan. Mix until the cheeses are fully incorporated.

          Prepare Panko Topping: In a separate bowl, combine the panko breadcrumbs with a drizzle of olive oil. This will help them become crispy when baked.

            Fill the Cups: Reduce the heat to low. Use a spoon to fill the cups of the skillet with the chicken and spinach mixture, smoothing the top. Sprinkle the panko mixture generously on top of each cup.
