1 block (14 oz) firm tofu, drained and pressed

1 cup buffalo sauce (store-bought or homemade)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

4 large whole wheat tortillas

1 cup lettuce, shredded

1 cup cherry tomatoes, halved

1/2 cup shredded carrots

1/2 cup blue cheese or vegan cheese crumbles (optional)

Fresh cilantro or parsley, for garnish

Instructions
 

Prepare the Tofu: After pressing the tofu to remove excess moisture, cut it into bite-sized cubes (about ½ inch).

    Marinate: In a bowl, mix the tofu cubes with olive oil, buffalo sauce, garlic powder, onion powder, salt, and pepper. Let it marinate for at least 15 minutes for optimal flavor.

      Cook the Tofu: Preheat a non-stick skillet over medium heat. Add the marinated tofu cubes and cook for about 10-12 minutes, turning occasionally until golden brown on all sides.

        Prepare the Wraps: While the tofu is cooking, lay the tortillas flat on a clean surface. Lay down a layer of shredded lettuce and evenly distribute the cooked tofu cubes on top.

          Add Fresh Ingredients: Top the tofu with halved cherry tomatoes, shredded carrots, and cheese crumbles if using.

            Wrap It Up: Fold the sides of the tortilla inwards, then roll from the bottom to form a tight wrap. Repeat for each tortilla.
