1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon vinegar)

2 large eggs

1/4 cup melted butter

1 cup breakfast sausage, cooked and crumbled (about 4 links)

1/2 cup shredded sharp cheddar cheese

1/4 cup chopped green onions (or chives)

1/4 teaspoon black pepper

a pinch of cayenne pepper (optional, for heat)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and grease a mini muffin tin or line it with mini muffin liners.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the cornmeal, all-purpose flour, baking powder, baking soda, salt, black pepper, and cayenne pepper (if using) until well combined.
