Ingredients
  

1 can of refrigerated biscuit dough (or homemade biscuit dough)

1 cup shredded mozzarella cheese

1/2 cup cooked breakfast sausage, crumbled

1/2 cup diced bell peppers (red and green)

1/4 cup sliced black olives

4 large eggs

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil or parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    Prepare the Biscuit Base: Open the can of refrigerated biscuit dough and separate the biscuits. Flatten each biscuit to about 1/4-inch thick and place them on the prepared baking sheet, leaving space in between.

      Cook the Eggs: In a medium skillet, heat olive oil over medium heat. Crack the eggs into the skillet and scramble them until fully cooked. Season with Italian seasoning, salt, and pepper. Remove from heat and set aside.

        Add the Toppings:

          - Preheat the oven if necessary.

            - Evenly distribute the cooked scrambled eggs over each flattened biscuit.

              - Sprinkle the crumbled sausage, diced bell peppers, and black olives on top of the eggs.

                - Generously top with shredded mozzarella cheese.
