4 medium zucchinis

1 cup cooked chicken, shredded

½ cup BBQ sauce (your favorite brand)

½ cup shredded cheese (cheddar or mozzarella)

¼ cup red onion, finely diced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Zucchini: Wash the zucchinis and slice them in half lengthwise. Use a spoon to scoop out the center flesh, leaving about ¼ inch on the sides to form a cup. Reserve the scooped zucchini flesh for later.

      Cook the Filling: In a medium skillet, heat the olive oil over medium heat. Add the reserved zucchini flesh and diced red onion. Sauté for about 3-4 minutes until the onions become translucent and the zucchini is slightly softened.

        Combine Ingredients: In a large mixing bowl, combine the sautéed zucchini mixture, shredded chicken, BBQ sauce, garlic powder, smoked paprika, salt, and pepper. Stir until everything is well mixed.

          Fill the Zucchini Cups: Place the zucchini halves cut-side up on a baking sheet lined with parchment paper. Generously spoon the BBQ chicken mixture into each hollowed zucchini cup.

            Add Cheese: Sprinkle shredded cheese evenly over the top of each filled zucchini cup, ensuring they are covered.

              Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.

                Garnish and Serve: Remove from the oven and let cool slightly. Garnish with freshly chopped parsley before serving.
