Mini Bacon and Egg Tacos

8 small corn tortillas

6 large eggs

6 strips of bacon, diced

1/2 cup shredded cheese (cheddar or pepper jack)

1/4 cup milk

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1 avocado, sliced

Fresh cilantro, for garnish

Hot sauce or salsa, for serving (optional)

Instructions
 

Cook the Bacon: In a large skillet over medium heat, add the diced bacon. Cook until crispy and golden brown, about 5-7 minutes. Use a slotted spoon to transfer the bacon to a plate lined with paper towels, leaving the rendered fat in the skillet.

    Scramble the Eggs: In a bowl, whisk together the eggs, milk, salt, and black pepper. In the same skillet with the bacon fat, add the olive oil and heat over medium-low. Pour in the egg mixture and gently stir with a spatula. Cook the eggs until just set but still soft and creamy, about 3-4 minutes. Carefully fold in the cooked bacon and half of the shredded cheese, mixing until combined.

      Warm the Tortillas: While the eggs are cooking, wrap the corn tortillas in a damp paper towel and microwave for about 30 seconds until warm and pliable. Alternatively, you can warm them in a dry skillet for about 30 seconds on each side.

        Assemble the Tacos: Place a small scoop of the scrambled egg and bacon mixture onto each tortilla. Top with the remaining cheese and a slice of avocado.

          Garnish: Sprinkle fresh cilantro over the top. Serve with hot sauce or salsa on the side for an extra kick.
