4 mini sweet bell peppers (any color)

1 cup cooked quinoa or rice

1 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1/2 cup diced tomatoes (canned or fresh)

1/2 cup shredded cheddar cheese (or your favorite cheese)

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Optional: sour cream or avocado for serving

Instructions
 

Prepare the Peppers: Wash the mini bell peppers and slice them in half lengthwise. Remove seeds and membranes. Set aside.

    Make the Filling: In a large mixing bowl, combine the cooked quinoa or rice, black beans, corn, diced tomatoes, 1/4 cup of shredded cheese, cumin, smoked paprika, garlic powder, salt, and pepper. Mix until all ingredients are well incorporated.

      Stuff the Peppers: Fill each pepper half with the mixture, pressing down lightly to pack the filling. Top with the remaining shredded cheese.

        Preheat the Air Fryer: Preheat your air fryer to 350°F (175°C) for about 3-5 minutes.

          Air Fry the Stuffed Peppers: Carefully place the stuffed pepper boats in your air fryer basket, making sure not to overcrowd them. Depending on the size of your air fryer, you may need to do this in batches. Cook for 8-10 minutes, or until the peppers are tender and the cheese is melted and bubbly.

            Serve: Once cooked, remove the pepper boats from the air fryer and garnish with fresh cilantro. Serve with optional toppings like sour cream or diced avocado.
