Ingredients

1 medium spaghetti squash

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 cup marinara sauce (store-bought or homemade)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 tablespoon Italian seasoning

Fresh basil leaves for garnish (optional)

Crushed red pepper flakes (optional for heat)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Spaghetti Squash: Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the inside of each half with olive oil, then sprinkle with salt, black pepper, and garlic powder.

Roast the Squash: Place the squash halves cut side down on a baking sheet lined with parchment paper. Roast in the preheated oven for 30-35 minutes, or until the flesh is tender and can be easily shredded with a fork.

Sauté the Marinara: While the squash is roasting, heat the marinara sauce in a small saucepan over medium heat. Stir in the Italian seasoning and let it simmer for about 5-10 minutes, allowing the flavors to meld.

Prepare the Cheese Mixture: In a mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Mix until well combined and set aside.

Shred the Squash: Once the spaghetti squash is cooked, remove it from the oven and let it cool for a few minutes. Using a fork, gently scrape the flesh to create spaghetti-like strands.

Combine Ingredients: In a large mixing bowl, combine the spaghetti squash strands with the marinara sauce. Mix well, ensuring all the squash is coated with the sauce.

Layer in a Baking Dish: Spread half of the spaghetti squash and sauce mixture in a greased baking dish. Layer the ricotta cheese mixture on top, and then top with the remaining spaghetti squash mixture.

Top with Cheeses: Sprinkle the remaining mozzarella and Parmesan cheeses evenly on top of the layered dish.

Bake: Return the dish to the oven and bake at 400°F (200°C) for an additional 15-20 minutes or until the cheese is bubbly and golden.

Garnish and Serve: Remove from the oven and let it cool slightly. Garnish with fresh basil leaves and sprinkle with crushed red pepper flakes if desired. Serve warm and enjoy your delicious Million Dollar Spaghetti Squash Pasta!
