4 large flour tortillas

1 cup crumbled feta cheese

1 cup shredded mozzarella cheese

1 cup cooked spinach, chopped (or fresh baby spinach)

1/2 cup sun-dried tomatoes, chopped

1/2 cup black olives, sliced

1/4 cup red onion, thinly sliced

1/2 cup cooked chicken breast, shredded (optional)

1 tablespoon olive oil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Tzatziki sauce for dipping (optional)

Instructions
 

Prepare the Filling: In a large bowl, combine the feta cheese, mozzarella cheese, cooked spinach, sun-dried tomatoes, black olives, red onion, and shredded chicken if using. Add the dried oregano, and season with salt and pepper to taste. Mix well.

    Warm the Tortillas: Heat a skillet over medium heat. Lightly warm each tortilla for about 30 seconds on each side to make them pliable.

      Assemble the Quesadillas: Place one warm tortilla on a plate. Spoon a generous amount of the filling mixture onto one half of the tortilla, then fold the other half over to create a half-moon shape.

        Cook the Quesadillas: In the same skillet, add a small drizzle of olive oil. Place the folded quesadilla in the skillet and cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese has melted. Repeat with the remaining tortillas.

          Slice and Serve: Remove the quesadillas from the skillet and let them cool for a minute. Cut into wedges and serve immediately, garnished with fresh basil or parsley if desired. Serve with tzatziki sauce for dipping.
