Mediterranean Chicken Wraps

2 boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons dried oregano

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

4 whole wheat or spinach tortillas

1 cup mixed greens (spinach, arugula, etc.)

1 cup cherry tomatoes, halved

1 cucumber, diced

½ red onion, thinly sliced

½ cup crumbled feta cheese

¼ cup kalamata olives, pitted and sliced

½ cup tzatziki sauce (store-bought or homemade)

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, oregano, garlic powder, paprika, salt, and pepper. Add the chicken breasts and ensure they are well-coated. Marinate for at least 30 minutes (or up to 2 hours for more flavor) in the refrigerator.

    Cook the Chicken: Preheat a grill pan or outdoor grill over medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side, or until cooked through and internal temperature reaches 165°F (75°C). Once cooked, remove from the grill and let it rest for 5 minutes before slicing into thin strips.

      Prepare the Vegetables: While the chicken is resting, prepare your fresh veggies. In a large mixing bowl, toss the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and kalamata olives together for a vibrant salad.

        Assemble the Wraps: Lay a tortilla flat on a clean surface. Spread a generous spoonful of tzatziki sauce on the tortilla. Layer on a portion of the mixed salad, followed by sliced grilled chicken. Top with additional tzatziki sauce if desired.

          Wrap It Up: Fold in the sides of the tortilla, then roll from the bottom upwards to create a secure wrap. Repeat the process for the remaining tortillas.

            Serve: Slice each wrap in half diagonally and serve immediately with extra tzatziki sauce on the side, if desired.
