Mediterranean Chicken Patties

1 lb ground chicken

1 cup cooked quinoa

1/2 cup feta cheese, crumbled

1/2 cup finely chopped spinach

1/4 cup sun-dried tomatoes, chopped

1/4 cup red onion, finely diced

2 cloves garlic, minced

1 large egg

1 tsp dried oregano

1 tsp dried basil

1/2 tsp ground cumin

Salt and pepper, to taste

1/4 cup fresh parsley, chopped

Olive oil, for frying

Greek yogurt or tzatziki sauce, for serving (optional)

Instructions
 

In a large mixing bowl, combine the ground chicken, cooked quinoa, feta cheese, spinach, sun-dried tomatoes, red onion, and garlic. Mix well until all ingredients are evenly incorporated.

    Add the egg, oregano, basil, cumin, salt, and pepper to the mixture. Stir until all ingredients are fully combined and form a sticky mixture.

      Using your hands, form the mixture into patties about 2-3 inches in diameter and approximately 1 inch thick. You should have about 8-10 patties depending on the size.

        Heat a skillet over medium heat and add a drizzle of olive oil. Once the oil is hot, carefully place the patties in the skillet, ensuring not to overcrowd. Cook for about 4-5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F).

          Once cooked, remove the patties from the skillet and set them on a paper towel to drain excess oil.

            Serve warm with a dollop of Greek yogurt or tzatziki sauce on the side, and garnish with fresh parsley for added flavor.
