Ingredients
  

2 cups rotini or fusilli pasta

1 lb boneless, skinless chicken breasts

1 tsp olive oil

1 tsp dried oregano

1 tsp garlic powder

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

For the Dressing:

1/4 cup olive oil

2 tbsp red wine vinegar

1 tsp Dijon mustard

1 tsp honey

1 clove garlic, minced

Salt and pepper, to taste

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the rotini or fusilli pasta according to package directions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Chicken: While the pasta is cooking, season the chicken breasts with olive oil, oregano, garlic powder, salt, and pepper. Heat a grill pan or skillet over medium-high heat and cook the chicken for about 6-7 minutes on each side or until cooked through and the internal temperature reaches 165°F (75°C). Let the chicken rest for 5 minutes before slicing into bite-sized pieces.

      Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, minced garlic, salt, and pepper. Adjust seasoning according to taste.

        Combine the Salad: In a large mixing bowl, combine the cooked pasta, sliced chicken, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley. Pour the dressing over the salad and toss gently to combine all ingredients evenly.

          Chill & Serve: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature, garnished with additional parsley or feta if desired.
