Mashed Potatoes Stuffed with Cheese & Beef

4 large russet potatoes

1 cup shredded cheddar cheese

1 cup ground beef

1/2 cup cream cheese, softened

1/2 cup sour cream

1/4 cup milk

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika (optional)

1 tablespoon olive oil

Fresh chives, finely chopped (for garnish)

Cook the Potatoes: Begin by peeling the russet potatoes and cutting them into quarters. Place them in a large pot, cover with cold water and add a pinch of salt. Bring to a boil and then reduce heat to simmer. Cook until tender, about 15-20 minutes.

    Prepare the Beef Filling: While the potatoes are boiling, heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and ground beef, cooking until the beef is browned and cooked through. Season with salt, pepper, and paprika. Remove from heat and set aside.

      Mash the Potatoes: Once the potatoes are cooked, drain and return them to the pot. Add cream cheese, sour cream, and milk. Mash the mixture until smooth and creamy. Taste and adjust seasoning, adding more salt and pepper if needed.

        Combine Cheeses and Beef: Fold in the shredded cheddar cheese into the warm mashed potatoes, reserving a small handful for topping later. Then, mix in the cooked beef mixture until evenly combined.

          Form the Pockets: Preheat your oven to 375°F (190°C). Using your hands, take a generous scoop of the cheesy beef mixture and form it into a ball. Use your thumb to create a pocket, gently pushing out the sides to create a hollow space. Repeat with the remaining mixture.

            Bake: Place the stuffed potato pockets on a greased baking sheet. Sprinkle the reserved cheddar cheese on top of each pocket. Bake in the preheated oven for about 15-20 minutes or until the tops are golden and the cheese is melted.

              Serve: Once baked, take them out of the oven and let them cool slightly. Garnish with fresh chives before serving.
