Maple Sausage Sweet Potato Breakfast Skillet

Ingredients
  

2 medium sweet potatoes, peeled and diced into small cubes

8 oz (225 g) maple sausage links, sliced (or your preferred breakfast sausage)

1 small yellow onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 tsp smoked paprika

½ tsp ground cinnamon

Salt and pepper to taste

2 tbsp olive oil

4 large eggs

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat and Prepare: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and sauté for about 10 minutes, stirring occasionally, until they start to soften and brown slightly.

    Cook the Sausage: Push the sweet potatoes to one side of the skillet and add the sliced maple sausage links to the empty side. Cook the sausage for 3-4 minutes, allowing them to brown.

      Add Vegetables: Stir in the diced onion and red bell pepper, and continue to cook for another 5 minutes until the onion becomes translucent.

        Season It Up: Add the minced garlic, smoked paprika, ground cinnamon, salt, and pepper to the skillet. Mix everything together and cook for an additional 2-3 minutes until the garlic is fragrant.

          Create Wells for Eggs: Using a spatula, create 4 small wells in the mixture. Carefully crack an egg into each well. Cover the skillet and reduce the heat to low. Cook for about 5-7 minutes, or until the eggs are cooked to your desired doneness.

            Garnish and Serve: Remove the skillet from the heat and sprinkle freshly chopped parsley on top for garnish. Serve immediately and enjoy the sweet and savory flavors!
