Maple Roasted Acorn Squash Rings

1 medium acorn squash

3 tablespoons pure maple syrup

2 tablespoons olive oil

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg (freshly grated, if possible)

1/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped fresh thyme (or 1 teaspoon dried thyme)

2 tablespoons pecans, chopped (optional)

1 tablespoon pumpkin seeds (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Acorn Squash: Slice the acorn squash in half lengthwise. Scoop out the seeds and strings with a spoon. Then, cut each half into 1-inch thick rings. You should have about 8-10 rings.

      Make the Maple Mixture: In a small bowl, whisk together the maple syrup, olive oil, cinnamon, nutmeg, salt, pepper, and thyme until well combined.

        Coat the Squash: Place the acorn squash rings in a large mixing bowl. Drizzle the maple mixture over the rings and toss gently until each ring is well coated.

          Arrange on Baking Sheet: Lay the coated squash rings in a single layer on the prepared baking sheet. Reserve any leftover maple mixture for basting later.

            Roast the Squash: Roast in the preheated oven for 25 minutes. Halfway through, brush the tops with any leftover maple mixture for extra flavor.

              Add Nuts (if using): After 25 minutes, remove the baking sheet from the oven. Sprinkle the chopped pecans and pumpkin seeds over the squash rings for added crunch.

                Finish Roasting: Return the baking sheet to the oven and roast for an additional 15-20 minutes, or until the squash is tender and caramelized. The edges should be slightly crispy and golden.

                  Serve: Once roasted, remove from the oven and let cool for a few minutes. Serve warm as a side dish or a delightful vegetarian appetizer.
