2 cups rolled oats

1 cup milk of choice (dairy or non-dairy)

1/2 cup pure maple syrup

1/4 cup brown sugar (light or dark)

1/4 cup melted coconut oil (or unsalted butter)

2 large eggs

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp ground cinnamon

1/4 tsp salt

1 cup chopped pecans (plus extra for topping)

1/2 cup dried fruit (e.g., cranberries or raisins, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with muffin liners.

    Prepare the Wet Mixture: In a large mixing bowl, whisk together the milk, maple syrup, brown sugar, melted coconut oil, eggs, and vanilla extract until well combined.

      Combine Dry Ingredients: In another bowl, combine the rolled oats, baking powder, ground cinnamon, and salt. Mix well.

        Mix Ingredients: Gradually add the dry mixture to the wet mixture, stirring until just combined. Fold in the chopped pecans and dried fruit if using.
