1 lb Brussels sprouts, trimmed and halved

3 tablespoons olive oil

2 tablespoons pure maple syrup

1 tablespoon Dijon mustard

2 cloves garlic, minced

1 teaspoon apple cider vinegar

Salt and pepper, to taste

1/4 cup toasted pecans, chopped (optional)

Fresh thyme or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Brussels Sprouts: In a large bowl, combine the halved Brussels sprouts with olive oil, salt, and pepper. Toss until the sprouts are evenly coated.

      Make the Maple Dijon Sauce: In a small bowl, whisk together the maple syrup, Dijon mustard, minced garlic, and apple cider vinegar until smooth.

        Combine: Drizzle the Maple Dijon sauce over the Brussels sprouts and toss again to ensure each sprout is coated with the sauce.

          Roast: Spread the Brussels sprouts in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until they are tender and caramelized, tossing halfway through to ensure even cooking.

            Add Pecans: If using, sprinkle the toasted pecans over the Brussels sprouts in the last 5 minutes of roasting.

              Garnish and Serve: Once out of the oven, garnish with fresh thyme or parsley for a burst of color. Serve warm as a side dish or a delicious vegetarian main.
