2 cups rolled oats

1 cup nuts (such as almonds and walnuts), roughly chopped

1 cup puffed rice or quinoa

1/2 cup unsweetened shredded coconut

1/2 cup maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup dried fruit (like cranberries, cherries, or apricots), chopped if large

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.

    Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, puffed rice or quinoa, shredded coconut, ground cinnamon, and salt. Mix well to ensure all dry ingredients are evenly distributed.

      Mix Wet Ingredients: In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until well combined.

        Combine Ingredients: Pour the wet mixture over the dry ingredients. Stir thoroughly until everything is coated evenly and starts to clump together.

          Spread on Baking Sheet: Transfer the granola mixture onto the prepared baking sheet. Use a spatula to spread it out evenly but press it down gently to form clusters.
