For the Salted Caramel:

1 cup granulated sugar

6 tablespoons unsalted butter, cut into pieces

1/2 cup heavy cream

1 teaspoon sea salt

For the Mousse:

1 cup heavy cream, chilled

3 large egg whites

1/4 cup granulated sugar

1 teaspoon vanilla extract

1/4 cup prepared salted caramel (cooled)

Garnish:

Whipped cream

Chocolate shavings or sea salt flakes

Instructions
 

Make the Salted Caramel:

    - In a medium saucepan over medium heat, melt the sugar, stirring constantly until it turns a deep amber color (about 10 minutes). Be careful not to burn it.

      - Once melted, carefully whisk in the butter until fully incorporated.

        - Slowly pour in the heavy cream (it will bubble up) and continue to stir until smooth. Remove from heat and stir in the sea salt. Let it cool to room temperature.

          Prepare the Mousse:

            - In a clean bowl, whip 1 cup of heavy cream until soft peaks form. Be careful not to overwhip. Set aside.

              - In another clean bowl, whip the egg whites until they start to froth, then gradually add the 1/4 cup of granulated sugar and beat until stiff peaks form.

                - Gently fold the cooled salted caramel into the whipped cream, followed by the vanilla extract.

                  - Carefully fold the whipped egg whites into the caramel and cream mixture, ensuring you retain as much air as possible.

                    Chill and Serve:

                      - Spoon the mousse into serving glasses or bowls and refrigerate for at least 2 hours, or until set.

                        - Before serving, top with a dollop of whipped cream and sprinkle with chocolate shavings or a few flakes of sea salt for a finishing touch.
