1 medium head of cauliflower (about 4 cups riced)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 large eggs

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

Additional 1/2 cup mozzarella cheese for topping

Marinara sauce for dipping

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy removal.

    Rice the Cauliflower: Remove the leaves and stem from the cauliflower. Cut it into florets and pulse in a food processor until it resembles rice. Alternatively, you can use a box grater.

      Cook the Cauliflower: Transfer the riced cauliflower to a microwave-safe bowl and microwave on high for about 5-6 minutes, until tender. Let it cool slightly.

        Remove Excess Moisture: Once cooled, place the cooked cauliflower in a clean kitchen towel or cheesecloth. Twist the cloth and squeeze to remove as much moisture as possible. This step is crucial for achieving crispy breadsticks.

          Mix the Dough: In a large bowl, combine the riced cauliflower, 1 cup of mozzarella cheese, Parmesan cheese, eggs, garlic powder, Italian seasoning, salt, and black pepper. Stir until well combined to form a dough-like consistency.

            Shape the Breadsticks: Transfer the mixture to the prepared baking sheet. Using your hands or a spatula, shape it into a rectangular slab, about 1/4 inch thick.

              Bake the Base: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the edges are golden and the top looks firm.

                Add Cheese Topping: Remove the baking sheet from the oven and sprinkle the remaining 1/2 cup of mozzarella cheese evenly over the baked base.
