Ingredients

2 large boneless, skinless chicken breasts

1 cup grated Parmesan cheese

1 cup Italian-style bread crumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1/2 teaspoon black pepper

1/2 teaspoon salt

2 large eggs

1/4 cup all-purpose flour

1/4 cup buttermilk

1/4 cup fresh parsley, chopped (for garnish)

Olive oil for frying

Instructions

Prepare Chicken: Preheat your oven to 400°F (200°C). Pat the chicken breasts dry with paper towels to remove excess moisture. If the chicken is thick, consider butterflying or pounding it to ensure even cooking.

Set Up Dredging Station: In three shallow bowls, prepare your dredging station:

      - In the first bowl, place the all-purpose flour mixed with a pinch of salt and pepper.

        - In the second bowl, whisk together the eggs and buttermilk until fully blended.

          - In the third bowl, combine the grated Parmesan cheese, bread crumbs, garlic powder, onion powder, Italian seasoning, salt, and pepper.

Dredge Chicken: Coat each chicken breast in the flour mixture first, shaking off any excess. Next, dip it into the egg mixture, allowing the excess to drip off. Finally, press each side of the chicken into the Parmesan breading mixture, ensuring an even coating.

Cook the Chicken: Heat a large skillet over medium-high heat and add enough olive oil to cover the bottom. Once the oil is hot, carefully place the breaded chicken breasts in the skillet. Cook for about 4-5 minutes on each side or until they’re golden brown and crispy. You may need to do this in batches if your skillet is not large enough.

Bake the Chicken: Once the chicken is browned, transfer the chicken breasts to a baking dish. Bake in the preheated oven for about 15-20 minutes, or until the internal temperature reaches 165°F (75°C).

Serve: Remove the chicken from the oven and let it rest for a few minutes. Garnish with fresh chopped parsley before serving. This dish pairs wonderfully with a side of spaghetti marinara or a fresh garden salad.
