Loaded BBQ Chicken Sweet Potato Skins

2 large sweet potatoes

1 cup cooked chicken, shredded

1 cup BBQ sauce (your favorite variety)

1 cup shredded cheddar cheese

1/2 cup sliced green onions (scallions)

1/2 cup sour cream

1/4 cup bacon bits (optional)

Salt and pepper to taste

Olive oil for brushing

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare Sweet Potatoes: Wash the sweet potatoes thoroughly under cold water and dry them with a paper towel. Pierce each potato several times with a fork. Rub a little olive oil on the skins and season lightly with salt.

      Roast Sweet Potatoes: Place the sweet potatoes on a baking sheet and roast them in the oven for about 45 to 60 minutes, or until tender when pierced with a fork. Once done, remove from the oven and let them cool slightly.

        Prepare the Chicken: While the sweet potatoes are roasting, mix the shredded chicken with the BBQ sauce in a bowl. Add salt and pepper to taste.

          Scoop and Stuff: When the sweet potatoes are cool enough to handle, cut them in half lengthwise. Scoop out a portion of the insides, leaving about a 1/4-inch border. You can use the scooped-out sweet potato in smoothies or mash them for another dish.

            Fill the Skins: Fill each sweet potato skin with the BBQ chicken mixture. Top with a generous amount of shredded cheddar cheese.

              Bake Again: Place the filled sweet potato skins back on the baking sheet and return them to the oven for about 15-20 minutes, or until the cheese is melted and bubbly.
