Ingredients
  

1 cup Greek yogurt (unsweetened)

1/4 cup honey or maple syrup

Zest of 1 lemon

1/4 cup freshly squeezed lemon juice

1 cup fresh blueberries (plus a few extra for garnish)

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1 cup granola or crushed graham crackers (for a crunchy base)

Instructions
 

Prepare the Base:

    - In a mixing bowl, combine the granola or crushed graham crackers with a tablespoon of melted coconut oil or unsalted butter. Mix well until the crumbs are coated.

      - Line an 8x8-inch baking dish with parchment paper, leaving a bit of overhang for easy removal. Press the granola mixture evenly into the bottom of the dish to form the base. Place in the freezer to set while preparing the yogurt layer.

        Make the Yogurt Mixture:

          - In a large bowl, combine the Greek yogurt, honey or maple syrup, lemon zest, lemon juice, vanilla extract, and salt. Whisk until smooth and creamy.

            Add the Blueberries:

              - Gently fold the fresh blueberries into the yogurt mixture, being careful not to crush them.

                Assemble the Bars:

                  - Remove the baking dish from the freezer. Pour the yogurt and blueberry mixture over the chilled granola base, smoothing it out with a spatula.

                    Chill:

                      - Cover the dish with plastic wrap or foil and place it in the freezer for at least 4 hours, or until firm.

                        Slice and Serve:
