2 cups plain Greek yogurt

1/2 cup freshly squeezed lemon juice (about 3-4 lemons)

Zest of 2 lemons

1/2 cup honey or maple syrup (adjust based on your sweetness preference)

1/4 cup water

A pinch of salt

Optional: Fresh berries (like raspberries or blueberries) for added flavor and color

Prepare the Yogurt Mixture: In a large bowl, combine the Greek yogurt, lemon juice, lemon zest, honey (or maple syrup), water, and a pinch of salt. Whisk everything together until smooth and well combined.

    Taste and Adjust: Taste the mixture and adjust the sweetness if necessary. You can add more honey or maple syrup if you prefer a sweeter popsicle.

      Add Optional Ingredients: If you'd like to incorporate fresh berries for an extra twist, gently fold them into the yogurt mixture.

        Fill the Molds: Pour the yogurt mixture evenly into popsicle molds. Leave a little space at the top as the mixture will expand while freezing.

          Insert Sticks: If your popsicle mold has a built-in stick, insert it now. If not, wait about 1 hour until the popsicles are partially frozen and then insert wooden sticks.

            Freeze: Freeze the popsicles for at least 4-6 hours or until they are completely solid.

              Release the Popsicles: To remove the popsicles, run warm water over the outside of the molds for a few seconds, and then gently pull the popsicles out.
