2 fillets of fresh salmon (approx. 6 oz each)

4 cups mixed greens (baby spinach, arugula, and romaine)

1 cup cherry tomatoes, halved

1 avocado, diced

1/2 cucumber, thinly sliced

1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup olives (Kalamata or green), pitted and sliced

1/4 cup fresh parsley, chopped

1 lemon (for juice and zest)

3 tablespoons olive oil

Salt and pepper, to taste

Optional: 1 teaspoon honey or maple syrup for sweetness

Instructions
 

Prepare the Salmon:

    - Preheat your oven to 400°F (200°C).

      - Line a baking sheet with parchment paper. Place the salmon fillets on the sheet, skin-side down.

        - Drizzle 1 tablespoon of olive oil over the salmon, and squeeze juice from half a lemon. Season with salt, pepper, and a sprinkle of lemon zest.

          - Bake the salmon for 12-15 minutes, or until it flakes easily with a fork.

            Make the Dressing:

              - In a small bowl, whisk together the remaining olive oil, juice from the other half of the lemon, lemon zest, salt, pepper, and honey (if using).

                Assemble the Salad:

                  - In a large bowl, combine the mixed greens, cherry tomatoes, diced avocado, cucumber slices, red onion, olives, and parsley. Toss gently to mix.

                    - Divide the salad mixture into two serving bowls.

                      Plate the Dish:
