Ingredients

1 ½ cups all-purpose flour

½ cup granulated sugar

2 tablespoons poppy seeds

2 teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 large egg

½ cup buttermilk (or substitute with milk + ½ tablespoon vinegar)

¼ cup vegetable oil

Zest of 1 large lemon

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

For the Glaze (optional):

1 cup powdered sugar

2 tablespoons fresh lemon juice

1 teaspoon lemon zest

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.

Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, poppy seeds, baking powder, baking soda, and salt until combined.

Combine Wet Ingredients: In a separate bowl, whisk together the egg, buttermilk, vegetable oil, lemon zest, lemon juice, and vanilla extract until smooth.

Combine Mixtures: Pour the wet mixture into the dry ingredients. Gently fold the ingredients together with a spatula until just combined. Be careful not to overmix; it's okay if there are a few lumps.

Fill Muffin Tin: Scoop the batter into the prepared muffin tin, filling each cup about ¾ full.

Bake: Bake in the preheated oven for 15-18 minutes or until a toothpick inserted into the center comes out clean.

Cool: Once baked, remove the muffins from the oven and let them cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.

Prepare the Glaze (optional): In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth. Drizzle over the cooled muffins if desired.

Serve: Enjoy these delightful lemon poppy seed muffins warm or at room temperature, perfect for breakfast, brunch, or a snack!
