Ingredients

1 cup all-purpose flour

1/2 cup granulated sugar

1 tablespoon poppy seeds

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup buttermilk (or milk + 1/2 tablespoon lemon juice)

1/4 cup vegetable oil

1 large egg

Zest of 1 lemon

2 tablespoons fresh lemon juice

Optional: 1/2 cup powdered sugar (for glaze)

Optional: 1 tablespoon fresh lemon juice (for glaze)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with mini muffin liners.

Mix Dry Ingredients: In a medium mixing bowl, whisk together the flour, granulated sugar, poppy seeds, baking powder, baking soda, and salt until well combined.

Combine Wet Ingredients: In another bowl, whisk together the buttermilk, vegetable oil, egg, lemon zest, and fresh lemon juice. Make sure everything is well mixed.

Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold the mixture together until just combined. Be careful not to overmix; a few lumps are okay.

Fill Muffin Tin: Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.

Bake: Bake in the preheated oven for 10-12 minutes, or until the muffins are lightly golden and a toothpick inserted into the center comes out clean.

Cool: Allow muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Prepare Glaze (Optional): In a small bowl, combine the powdered sugar with the fresh lemon juice until smooth. Drizzle it over the cooled muffins for a sweet touch.

Serve: Enjoy your delicious Lemon Poppy Seed Mini Muffins with a cup of tea or coffee for a delightful treat!
