Ingredients
  

For the dough:

2 ¼ cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

¾ cup warm water (110°F/43°C)

1 tbsp olive oil

1 tsp sugar

½ tsp salt

For the lemon sauce:

1 cup ricotta cheese

Zest of 2 lemons

1 tbsp fresh lemon juice

2 tbsp honey

1 tsp vanilla extract

Pinch of salt

Toppings:

1 cup mozzarella cheese, shredded

½ cup goat cheese, crumbled

1 small red onion, thinly sliced

1 cup arugula, lightly dressed with olive oil

Fresh basil leaves, for garnish

Lemon wheels and extra zest, for garnish

Instructions
 

Prepare the Dough:

    - In a small bowl, combine the warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

      - In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.

        - Gradually mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until it's smooth and elastic.

          - Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place until doubled in size, approximately 1 hour.

            Make the Lemon Sauce:

              - In a medium bowl, mix together the ricotta cheese, lemon zest, lemon juice, honey, vanilla extract, and a pinch of salt until smooth and creamy. Set aside.

                Preheat the Oven:

                  - Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat as well.

                    Assemble the Pizza:

                      - Once the dough has risen, punch it down and roll it out into a round shape on a floured surface, about 12 inches in diameter.

                        - Transfer the rolled-out dough onto a parchment paper-lined baking sheet or onto a floured pizza peel if using a pizza stone.

                          - Spread the lemon sauce evenly over the dough, leaving a small border around the edges.

                            - Sprinkle the shredded mozzarella cheese and crumbled goat cheese on top. Add the thinly sliced red onion.

                              Bake the Pizza:

                                - Carefully transfer the pizza to the preheated oven or onto the hot pizza stone. Bake for 12-15 minutes or until the crust is golden brown and cheese is bubbling.

                                  Garnish and Serve:

                                    - Once baked, remove the pizza from the oven. Top it with the fresh arugula, basil leaves, and garnish with lemon wheels and additional lemon zest.

                                      - Slice and serve immediately while hot!
