Lemon Pepper Tilapia with Garlic Spinach

4 tilapia fillets (about 6 ounces each)

2 tablespoons olive oil

Zest of 1 lemon

2 tablespoons fresh lemon juice

1 teaspoon black pepper

1 teaspoon sea salt

1 teaspoon garlic powder

1 teaspoon dried oregano

1 tablespoon fresh parsley, chopped (for garnish)

For the Garlic Spinach:

8 cups fresh spinach, washed and dried

3 tablespoons olive oil

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Lemon wedges, for serving

Instructions
 

Prepare the Marinade:

    In a small bowl, mix together the olive oil, lemon zest, lemon juice, black pepper, sea salt, garlic powder, and oregano.

      Marinate the Tilapia:

        Place the tilapia fillets in a shallow dish and pour the marinade over them, ensuring both sides are well coated. Cover with plastic wrap and let it marinate in the refrigerator for at least 20 minutes.

          Cook the Tilapia:

            Heat a large skillet over medium-high heat. Once hot, add 2 tablespoons of olive oil. Remove tilapia from the marinade and gently place the fillets in the skillet. Cook for 3-4 minutes on each side or until the fish flakes easily with a fork and has a golden crust. Remove from skillet and keep warm.

              Prepare the Garlic Spinach:

                In the same skillet, add 3 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds or until fragrant (be careful not to burn it).

                  Sauté the Spinach:

                    Toss in the fresh spinach (it will wilt down) and sprinkle with red pepper flakes, salt, and pepper. Cook for about 2-3 minutes, stirring frequently until the spinach is just wilted but still bright green.
