Ingredients

For the Chicken:

4 chicken breasts (boneless, skinless)

2 tablespoons olive oil

Zest of 1 lemon

Juice of 1 lemon

2 teaspoons black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

Fresh parsley, chopped (for garnish)

For the Broccoli Rice:

2 cups broccoli florets (fresh or frozen)

1 cup jasmine rice (or brown rice)

2 cups chicken broth (low-sodium)

1 tablespoon olive oil

1/2 teaspoon garlic powder

Salt and pepper to taste

Lemon juice (to taste)

Instructions

Marinate the Chicken:

    - In a mixing bowl, combine olive oil, lemon zest, lemon juice, black pepper, garlic powder, onion powder, and salt. Stir until mixed well.

      - Add the chicken breasts to the marinade, ensuring they are coated evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

        Prepare the Broccoli Rice:

          - If using fresh broccoli, chop it into small florets. Using a food processor, pulse until it resembles rice texture. If using frozen broccoli, just thaw and chop.

            - In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add garlic powder and sauté for 30 seconds until fragrant.

              - Add the rice and toast for about 2 minutes, stirring frequently.

                - Pour in the chicken broth, add salt and pepper to taste, and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes (or according to rice package instructions).

                  - Stir in the broccoli rice after the rice has cooked and simmer for an additional 5 minutes until the broccoli is tender. Adjust seasoning with lemon juice to taste.

                    Cook the Chicken:

                      - Preheat a grill pan or skillet over medium-high heat. Remove chicken from the marinade, allowing excess to drip off.

                        - Cook the chicken for 6-7 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove from heat and let rest for 5 minutes before slicing.

                          Serve:

                            - Spoon the broccoli rice onto plates, top with sliced lemon pepper chicken, and garnish with fresh parsley. Drizzle with extra lemon juice if desired.
