Lemon-Herb Shrimp Skewers with Couscous

For the Shrimp Skewers:

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

Juice of 1 lemon (about 3 tablespoons)

Zest of 1 lemon

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)

1 teaspoon fresh parsley, chopped

Salt and pepper, to taste

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes)

For the Couscous:

1 cup couscous

1 ¼ cups vegetable or chicken broth

1 tablespoon olive oil

1 tablespoon lemon juice

½ cup cherry tomatoes, halved

¼ cup cucumber, diced

2 tablespoons fresh parsley, chopped

Salt and pepper, to taste

Instructions
 

Prepare the Marinade:

    In a mixing bowl, combine olive oil, lemon juice, lemon zest, minced garlic, smoked paprika, thyme, parsley, salt, and pepper. Mix well to create a marinade.

      Marinate the Shrimp:

        Add the shrimp to the marinade and toss to coat. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes (up to 2 hours for deeper flavor).

          Cook the Couscous:

            In a medium saucepan, bring vegetable or chicken broth to a boil. Once boiling, stir in the couscous, cover, and remove from heat. Let it sit for about 5 minutes until the couscous has absorbed the liquid.

              Fluff and Season Couscous:

                After 5 minutes, fluff the couscous with a fork. Stir in olive oil, lemon juice, cherry tomatoes, cucumber, parsley, and season with salt and pepper to taste.
