2 large chicken breasts

2 tablespoons olive oil

Zest and juice of 1 lemon

2 teaspoons dried Italian herbs (oregano, basil, thyme)

Salt and pepper, to taste

4 large whole wheat tortillas

2 cups romaine lettuce, chopped

1 cup cherry tomatoes, halved

1/2 cup Caesar dressing

1/4 cup grated Parmesan cheese

Optional: Croutons for extra crunch

Instructions
 

Marinate the Chicken:

    - In a bowl, combine olive oil, lemon zest, lemon juice, Italian herbs, salt, and pepper.

      - Add the chicken breasts to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes up to 2 hours.

        Grill the Chicken:

          - Preheat your grill or grill pan over medium-high heat.

            - Remove the chicken from the marinade and grill for 6-7 minutes per side, or until fully cooked and juices run clear. The internal temperature should reach 165°F (75°C).

              - Once done, remove the chicken from the grill and let it rest for about 5 minutes before slicing.

                Prepare the Wraps:

                  - In a large bowl, toss the chopped romaine lettuce, cherry tomatoes, Caesar dressing, and half of the Parmesan cheese until well combined.

                    - Lay down a tortilla on a clean surface. Place a portion of the salad mixture in the center of the tortilla, followed by a few slices of grilled chicken. Top with additional Parmesan cheese and croutons if desired.

                      Roll the Wrap:

                        - Fold in the sides of the tortilla and roll it tightly from the bottom up to enclose the filling.

                          - Repeat with the remaining tortillas and fillings.

                            Serve:

                              - Slice the wraps in half if desired and serve immediately, or wrap in parchment paper for easy transport. Enjoy your bright, flavorful wraps!
