Lemon Garlic Shrimp and Zucchini Noodles

1 lb (450g) large shrimp, peeled and deveined

3 medium zucchinis, spiralized into noodles

4 cloves garlic, minced

1 lemon, zested and juiced

1/4 cup (60ml) chicken or vegetable broth

2 tablespoons olive oil

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

Optional: 1/4 cup grated Parmesan cheese for topping

Instructions
 

Prepare the Zucchini Noodles: Use a spiralizer to create zucchini noodles (zoodles). If you don't have a spiralizer, you can use a julienne peeler or buy pre-spiralized zucchini.

    Sauté Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute or until fragrant.

      Cook Shrimp: Add the shrimp to the skillet, seasoning with salt and pepper. Cook for about 2-3 minutes on each side, or until they turn pink and opaque. Be careful not to overcook the shrimp!

        Add Broth and Lemon: Pour in the chicken or vegetable broth, lemon juice, and lemon zest. Stir to combine, cooking for an additional 2 minutes to let the flavors meld together.

          Incorporate Zoodles: Add the spiralized zucchini noodles to the skillet, tossing them gently with the shrimp and sauce. Cook for another 2-3 minutes, just until the zoodles start to soften but remain slightly crunchy.

            Serve: Remove the skillet from heat, taste, and adjust seasoning if necessary. Serve the dish hot, garnishing with freshly chopped parsley and a sprinkle of Parmesan cheese, if desired.
