Lemon Garlic Chicken Zoodle Bowls

2 medium zucchinis, spiralized into noodles (zoodles)

1 lb boneless, skinless chicken breasts

4 cloves garlic, minced

1 lemon (juice and zest)

2 tbsp olive oil

1 tsp dried oregano

½ tsp red pepper flakes (optional, for heat)

Salt and pepper, to taste

1 cup cherry tomatoes, halved

2 cups fresh spinach

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, minced garlic, lemon juice, lemon zest, dried oregano, red pepper flakes, salt, and pepper. Add the chicken breasts and coat well. Marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

    Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and cook for about 6-7 minutes per side until cooked through and no longer pink in the center. Once done, let the chicken rest for 5 minutes, then slice it thinly.

      Sauté the Zoodles: In the same pan (you can add a little more olive oil if needed), add the spiralized zucchini and sauté for about 2-3 minutes, just until they are tender but still al dente. Season with a pinch of salt and pepper. Remove from the pan and set aside.

        Combine Vegetables: In the same pan, add the cherry tomatoes and spinach. Sauté for 2-3 minutes until the spinach wilts and the tomatoes soften slightly. Pour in the reserved chicken marinade and cook for another minute, allowing the flavors to meld.

          Assemble the Bowls: Divide the zoodles among serving bowls. Top each bowl with sautéed spinach and tomatoes, followed by slices of the grilled chicken.

            Garnish: Finish with fresh parsley and a sprinkle of grated Parmesan cheese, if desired. Add more lemon juice for an extra citrusy kick!
