Lemon Garlic Chicken Pasta with Broccoli

8 oz. fettuccine pasta

2 cups broccoli florets

1 lb. chicken breast, boneless and skinless, cut into bite-sized pieces

4 cloves garlic, minced

1 medium lemon (zest and juice)

1/2 cup chicken broth (low-sodium preferred)

1/4 cup heavy cream

3 tbsp olive oil

1 tsp red pepper flakes (optional for a kick)

Salt and pepper to taste

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. During the last 3 minutes of cooking, add the broccoli florets. Once done, drain and set aside, reserving 1/2 cup of the pasta water.

    Sauté the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the chicken pieces with salt and pepper. Add the chicken to the skillet and cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Prepare the Lemon Garlic Sauce: In the same skillet, add the remaining tablespoon of olive oil and reduce the heat to medium. Add the minced garlic and red pepper flakes (if using), and sauté for about 1 minute until fragrant, being careful not to burn the garlic.

        Add Liquids: Stir in the chicken broth, lemon juice, and lemon zest. Allow the mixture to simmer for about 2 minutes to reduce slightly. Then, add the heavy cream and stir until well combined.

          Combine Ingredients: Return the cooked chicken and the drained fettuccine and broccoli to the skillet. Toss everything together until the pasta and chicken are well coated with the sauce. If the pasta seems dry, gradually add some of the reserved pasta water until the desired consistency is reached.

            Finish with Cheese and Serve: Remove from heat and stir in the grated Parmesan cheese until melted and creamy. Taste and adjust seasoning with salt and pepper as needed.

              Garnish and Enjoy: Serve the pasta hot, garnished with freshly chopped parsley and additional Parmesan cheese on top.
