½ cup unsalted butter, melted

⅓ cup sugar

Pinch of salt

For the Lemon Cream Filling:

1 cup granulated sugar

½ cup fresh lemon juice (about 2-3 lemons)

2 teaspoons lemon zest

4 large egg yolks

4 tablespoons unsalted butter, cut into cubes

1 tablespoon cornstarch

1 cup heavy cream

For the Whipped Topping:

1 cup heavy whipping cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

For Garnish:

Lemon slices

Fresh mint leaves

Instructions

Prepare the Crust:

    - In a mixing bowl, combine the graham cracker crumbs, melted butter, sugar, and salt. Mix until the crumbs are evenly coated.

      - Press the mixture firmly into the bottom of serving jars (approximately 10 oz each), aiming for a layer about 1/4 inch thick. Refrigerate while you prepare the filling.

        Make the Lemon Cream Filling:

          - In a medium saucepan over medium heat, whisk together the sugar, lemon juice, lemon zest, egg yolks, and cornstarch until well combined, with no lumps.

            - Continue to stir over medium heat until the mixture thickens and starts to bubble (about 5-7 minutes). Be careful not to let it boil. Remove from heat.

              - Stir in the butter cubes until fully melted and incorporated. Allow the filling to cool slightly before adding to the jars.

                Assemble the Jars:

                  - Once cooled, evenly distribute the lemon cream filling over the crust in each jar. Leave some space at the top for whipped topping.

                    - Cover the jars with plastic wrap or lids and refrigerate for at least 2 hours to fully set.

                      Prepare the Whipped Topping:

                        - In a clean mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract with an electric mixer until soft peaks form.

                          - Once the lemon cream has set, generously pipe or spoon the whipped cream over the lemon filling in each jar.

                            Garnish and Serve:

                              - Top each jar with a lemon slice and a mint leaf for a fresh touch.

                                - Serve chilled and enjoy!
